Salmon with Potato-Artichoke Hash
4-6 red potatoes,scrubbed and sliced 1/4 inch thick
1-14oz can artichoke hearts in water,drained and halved ( or you can buy the quartered ones)
1/4 tsp dried thyme
1/2 tsp olive oil
Salt and pepper
1 1/2 lb. salmon,cut into 4 pieces (Atlantic wild caught)
Preheat oven to 475 degrees. In a large roasting  pan or rimmed cooking sheet, toss together potatoes, artichoke, thyme, olive oil, 1/2 tsp salt and 1/4 tsp pepper. Push vegetables to the side of pan. Arrange salmon pieces in center of pan, gently press them together to form one long piece. Coat with 1/2 tsp olive oil and salt and pepper to taste. Bake for about 20 minutes, or until vegetables are tender and salmon is opaque.
I serve with the Garlic Aioli Mustard from Trader Joes.
