South of the Border


1 cup of Garbanzo Beans,

1 cup of Kidney Beans,

a pinch of Cilantro,

a pinch of Green Onions,

2 Tbsp of Slivered Almonds.

2 Eggs.

Preheat your oven to 300 degrees. Puree cooked beans with some of their liquid for five seconds in a blender. Consistency should be chunky not soupy. Add salt and pepper if desired. Scoop into an oven safe pan. Heat in the oven for about ten to fifteen minutes. On the side, make sunny side up or over easy eggs. Remove beans from the oven and scoop into a bowl and add the eggs on top. You may add additional salt and pepper. Add cilantro, green onions, and slivered almonds.
